Isomalt is a mixture of two isomers, α-D-pyranose-glucopyranosyl-1,6-sorbitol (GPS) and α-D-pyranose-glucopyranosyl-1,1-mannitol (GPM), obtained by enzymatically reforming the sucrose structure to form a more stable reducing disaccharide, isomaltulose, and then hydrogenating it. It is also called palatinol or isomalt.

1 Does not cause blood sugar to rise
The human body's own digestive enzymes are extremely difficult to utilize isomalt, and the hydrolysis rate is slower than sucrose, and the absorption rate is much slower than sucrose. It will not cause fluctuations in blood sugar levels, so it will not cause blood sugar to rise.
The GI value of isomalt is between 2 and 12. After consumption, the blood sugar response is gentle, and the increase is much lower than that of glucose.
2 High tolerance
The human body's tolerance to isomalt is surprisingly large. Daily intake of 50g will not cause gastrointestinal discomfort. Therefore, after review and approval by the FAO/WHO Joint Food Additives Expert Committee, the daily intake of isomalt is not regulated. my country stipulates that the consumption is ≤100 grams/day.

It will not cause changes in the pH value of the tooth surface and is not caries-causing. Isomalt is not fermented by oral bacteria to produce insoluble glucans that cause dental caries, and adding isomalt to sucrose can significantly inhibit the production of insoluble glucans.

Isomalt is an excellent bifidobacterium proliferation factor.
